Last Thursday I caught up with Chef Jim Kennedy and his award winning Food Truck, FoodaTude..Food with Attitude. I brought the whole family out and tried out everything from Nachos to Cheese Curds. But I was there for the Reuben. First, this is a serious labor of love from the FoodaTude team because the Pastrami is brined for 21 days and then smoked for over ten hours. That's a commitment to making a great piece of Pastrami. The kraut is made from fresh cabbage and the 1000 island dressing is also homemade. Let me tell you, the taste is very evident that these are all top of the line ingredients. I appreciated Chef Kennedy taking the time to talk about his process for making everything from scratch. I'd share some of that but it's very hard to take all those years of experience and put it into a blurb. You need to stop by for yourself, eat this amazing Reuben, and hopefully you'll get some culinary knowledge from the Chef. I'll definitely be back!
